How to make Oreo Cheesecake (no bake!)
A good cake starts with the base. In this case, we’ll start with the crust!
Add about 230g of crushed Oreos into a food processor and process into fine crumbs.
Melt the butter and add it to the fine crumbs.
Mix them until they’re moist!
Prepare a 9-inch springform pan (parchment paper optional)
Scoop the mixture into the pan and firmly flatten and press it into a single layer
Chill in the refrigerator for now!
While the base is resting, we can focus on making the cheesecake part.
Grab a stand mixer with a whisk or a large mixing bowl; a hand-held mixer works fine here.
Beat the cream cheese until it’s smooth.
Add in icing sugar and vanilla extract while continuing to beat the ingredients.
In a separate bowl, add the heavy whipping cream and mix that on low speed first.
Then, increase the speed to medium-high (adjust hand strength where needed!) until the mixture thickens and stiff peaks form.
Add the whipped cream and a handful of Oreos to the cream cheese mixture and mix them on low speed.
And now is the time to mix it altogether!
Remove the springform pan with the crust.
Scoop the cheesecake filling onto the crust and spread it evenly. Repeat until everything is evenly mixed.
Optional: add the remains of the crushed Oreo on top and gentle press on them.
Cover the pan and refrigerate it for about four to five hours.
